Why would anyone want anodized bakeware?
According to www.fatdaddios.com, “Aluminum is recognized as the ideal base metal for outstanding baking results. By reflecting heat rather than absorbing heat, aluminum reaches baking temperatures faster and cools quicker. This is critical for cake, pastry, and many other dessert recipes. Have you ever taken a prized dessert out of the oven only to watch it get darker and crack as it continues to bake on your cooling rack? This is the challenge you get when baking with steel or steel based bakeware. They all retain heat and continue baking long after being removed from the oven. If aluminum is good then anodized aluminum is perfection. Believe it or not, aluminum is porous like a sponge and will absorb fats, sugar, oil, dish soap and detergents.
Anodizing ‘safe-seals’ the natural pores of aluminum creating a:
- More versatile baking surface
Anodizing creates a non-reactive surface allowing you to bake a wider variety of sweet citrus or tomato based foods than you can in other natural aluminum or aluminized-steel products. Anodizing is not a coating. It’s an environmentally-friendly process that contains no chemical additives, dyes, CFC’s, PTFE’s, or PFOA’s. Anodizing is the reason Fat Daddio’s bakeware will never chip, flake, peel, pit, or rust.”
In short, an anodized cake pan is easier to bake with and easier to clean.
